[Recipe] - Gluten Free Peanut Butter Brownies

One of my very good friends has celiac disease aka she's allergic to gluten.  With this allergy, she can't have any wheat - meaning no pasta, cake, cookies, bread, etc. which can take the fun out of eating for her sometimes.  It can also be hard to find recipes that don't require gluten and actually taste good.

So, when I had her over for dinner a few weeks ago, I decided to make her these gluten-free brownies.  And, they turned out really great!  (and they're much better for you than brownies with gluten!)




Ingredients:
2 cups peanut butter
2 cups sugar
4 eggs
2 teaspoons vanilla
A couple of glugs of molasses (I did about 1)
Extras: I added chopped pecans (about 1 cup) and chocolate chips (about 1 cup)



Steps:
1. Mix together all of the ingredients.



2. Spread mixture into a grease 9x13 pan.



3. Bake at 350 for 25 minutes (based on your oven it may take a little longer).
*Keep in mind the brownies will still be soft when they're done since there is no flour.
